Old Fashioned Gingerbread

I love gingerbread, this time of year, a warm dessert hits the spot.
I took this favorite recipe and gave it a more gingery profile.

Old Fashioned Gingerbread

Ingredients:
                 2 cups flour
                 1 & 1/2 tsp. baking soda
                 2 & 1/4 tsp. powdered ginger
                 1/2 tsp. cinnamon
                 1/4 tsp. cloves
                 5 Tbsp. butter( at room temp.)
                 1/3 cup brown sugar
                  1 egg
                  1 Tbsp. grated fresh ginger,
                 1/3 chopped crystallized ginger
                 3/4 cup dark molasses
                 3/4 cup cold water

Heat oven to 350 F.

Grease a cake pan, 8x8 inch square or round.

Whisk together into a bowl or large measuring cup:
                 2 cups flour
                 1 & 1/2 tsp. baking soda
                 2 & 1/4 tsp. powdered ginger
                 1/2 tsp. cinnamon
                 1/4 tsp. cloves
                

In another bowl beat until creamy : 5 Tbsp. butter (it should be at room temp.)
Add beating until light: 1/3 cup brown sugar
Add: 1 egg, 1 Tbsp. grated fresh ginger, 1/3 chopped crystallized ginger.
Freeze your fresh ginger root for easy grating !!
No easy way that I know of to chop this stuff.

Pour in slowly while beating: 3/4 cup dark molasses. If you spray the cup measure with oil first the molasses comes out better.

Add 1/2 of the dry ingredients until just mixed. Add the rest of the dry ingredients.

Slowly pour in while mixing : 3/4 cup cold water
Mix until well blended.

Pour into pan.

Bake 35 to 40 minutes.
You can make it ahead of time and I highly recommend heating it up before you serve it.
Whipped cream is my topping of choice.
Once again my poker group approved.
